Where are my gin lovers out there!?
I absolutely love gin and tonics, especially in the summertime with fresh lemon, or basil and cucumber! I’ve always seen gin and tonics as a summer cocktail, until the other month when I came up with this gorgeous rosemary grapefruit gin and tonic with honey simple syrup!
I really want to create some gorgeous fall and winter cocktails that accentuated some beautiful fall flavours! Even though technically grapefruits aren’t in season until about October, I can usually find that grapefruit is available all year round.
To bring a little bit of fall comfort to this recipe, I made the most gorgeous honey and rosemary simple syrup! The result – a beautifully balanced cocktail with just a hint of herbs and honey! It makes you want to just curl up with a good book in front of the fire!
For a cold cocktail, it is so cozy and warming, perfect for a signature fall drink for dinner parties! This post is to remind you, that cocktails are not just for summer!
THIS! This is everything! I can’t believe I’ve never made a honey syrup before! I guess you can still call it a simple syrup because I’m still combing a sugar and a water? But this is the thing that makes this grapefruit gin cocktail next level good!
The syrup is really easy to make – I combined equal parts water to honey with 1 sprig of fresh rosemary. The rosemary brings yet another fresh element to this cocktail, and I promise you, it won’t be overpowering!
LET’S GET TO THE GRAPEFRUIT JUICE
Fresh is best! I squeezed 2 large pink grapefruits to yield around 4oz of grapefruit juice to make two cocktails. If you can’t find fresh grapefruits, store-bought will do but with a slightly different taste.
THE REST
The rest of the cocktail is very simple! Combine the ingredients, drink and enjoy! You can either use tonic water or soda, depending on your own likes. I love using tonic water to resemble more of a gin and tonic, but it is totally up to your own taste buds!

INGREDIENTS
HONEY SIMPLE SYRUP
- 1/4 cup honey
- 1/4 cup water
- 1 sprig rosemary
GRAPEFRUIT GIN COCKTAIL
- 2 oz pink grapefruit juicefresh squeezed
- 1 oz honey simple syrup
- 1 oz gin use good quality gin, 1-2 oz, taste dependent
- 4 oz tonic or soda or extra to top up
- ice
- sprig of rosemary to garnish

INSTRUCTIONS
HONEY SIMPLE SYRUP
- Combine ingredients in a small saucepan and bring to a simmer until the sugar has dissolved.
- Let it sit for 5 minutes to let the flavours infuse.
GRAPEFRUIT GIN COCKTAIL
- Combine all the ingredients in a 10oz glass, top with ice and serve.
